Ive been having a lot of Mexican style food lately as I need to get rid of my sour cream. Without the cheese and cream this dish is vegan.
- Mixed beans
- Brown rice
- Red chilli
- Quorn mince
- Passatta/chopped tomatoes
- Cayenne pepper
- Salt and pepper
- Chop the onions, courgette, peppers, red chilli, garlic and mushrooms. Add onions to a pan til soft then add the peppers, garlic, quorn mince and red chillis.
- Then add courgettes, mixed beans, spinach and mushrooms. Cover with passatta or chopped tomatoes and add the cayenne pepper, salt and pepper. If you like marmite add a spoonful of it now and let simmer for 10 minutes. I usually only add a small teaspoon as it’s strong and can over power other flavours.
- Once cooked, microwave the rice and plate it all up. I add a dollop of sour cream sometimes and some cheddar.
