Made myself a huge brunch as I missed breakfast!
- Kallo lightly salted wholegrain rice cakes
- Cherry tomatoes
- Spring onion
- Salt and pepper
- Dairy free spread
- Fry the mushrooms and garlic in the pan with the spread
- Cut up the avocado and mash it with a fork so it besomes guac texture.
- Cut the cherry tomatoes and spring onion and add to the avocado with salt and pepper.
- Put the avocado on the rice cakes and quickly cook the spinach with the mushrooms.
- Serve 🙂
