Avocado rice cakes with mushroom and spinach 

Made myself a huge brunch as I missed breakfast! 

Ingredients:

  • Kallo lightly salted wholegrain rice cakes 
  • Cherry tomatoes
  • Spring onion
  • Avocado
  • Salt and pepper
  • Mushrooms
  • Spinach
  • Garlic
  • Dairy free spread 

Method:

  1. Fry the mushrooms and garlic in the pan with the spread 
  2. Cut up the avocado and mash it with a fork so it besomes guac texture. 
  3. Cut the cherry tomatoes and spring onion and add to the avocado with salt and pepper. 
  4. Put the avocado on the rice cakes and quickly cook the spinach with the mushrooms. 
  5. Serve 🙂
