Spicy tomato chickpeas with rice 

Ingredients:

  • Tinned tomatos
  • Chickpeas
  • Peppers
  • Courgette
  • Onion
  • Garlic
  • Fresh red pepper
  • Cayenne pepper
  • Cumin 
  • Smoked paprika 
  • Pepper
  • Veg stock
  • Brown rice

Method:

  1. Cook the onions in a pan until softer then add the courgette and peppers. 
  2. Add the chickpeas, garlic and red pepper. 
  3. Add the tinned tomatos and spices to your taste and the veg stock. 
  4. Let simmer for 10 minutes. 
  5. Serve with rice.
