Veggie chilli

Healthy without the cheese and sour cream I add. 

Ingredients:

  • Brown rice
  • Passatta 
  • Quorn
  • Chickpeas
  • Kidney beans
  • Spinach
  • Peppers
  • Onion
  • Garlic
  • Green beans
  • Cumin
  • Cayenne pepper
  • Fresh cut chilli
  • Chilli flakes
  • Salt 
  • Pepper
  • Soy sauce 

Method:

  1. Cook the green beans in the microwave to soften while starting to fry the onions
  2. Add the garlic pepper and chilli when the onions are softer. 
  3. Add the passatta chickpeas kidney beans and spices. 
  4. Cook for ten minutes on summer and then add the spinach 
  5. Serve with brown rice, sour cream and cheddar.
